This Hamburger Hash Brown Casserole is a hearty and comforting dish perfect for family dinners. It features a layer of crispy hash brown potatoes topped with savory ground beef cooked in brown gravy, mixed vegetables, and a generous sprinkle of cheddar cheese and crispy French-fried onions. Baked to perfection, this casserole combines textures and flavors for a satisfying meal.

Ingredients

Potato Layer

  • 4 cups frozen shredded hash brown potatoes
  • 3 tablespoons canola oil
  • 1/8 teaspoon pepper

Beef Mixture

  • 1 pound ground beef
  • 1 cup water
  • 1 envelope brown gravy mix
  • 1/2 teaspoon garlic salt
  • 2 cups frozen mixed vegetables

Topping

  • 1 can (2.8 ounces) French-fried onions, divided
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Prepare Potato Base: Preheat the oven to 350°F (175°C). In a large bowl, mix the frozen shredded hash brown potatoes with canola oil and pepper until well coated. Press the potato mixture evenly into a greased 8-inch square baking dish. Bake uncovered for 25-30 minutes until the potatoes are thawed and slightly set.
  2. Cook Ground Beef: While the potatoes bake, heat a large saucepan over medium heat. Add ground beef, cook, and break it up with a spoon until no longer pink, about 5-7 minutes. Drain excess fat from the cooked beef.
  3. Make Gravy and Combine: Stir in water, brown gravy mix, and garlic salt into the cooked beef. Bring to a boil, then cook and stir for 2 minutes to thicken the gravy. Add frozen mixed vegetables, cook and stir for an additional 5 minutes until vegetables are heated through.
  4. Mix Onions and Cheese: Stir half of the French-fried onions and half of the shredded cheddar cheese into the beef and vegetable mixture. Pour this mixture evenly over the baked hash brown layer in the dish.
  5. Bake Casserole: Return the casserole to the oven and bake for 10 minutes to meld the flavors and warm everything through.
  6. Top and Finish Baking: Sprinkle the remaining French-fried onions and cheddar cheese over the casserole. Bake for an additional 5 minutes or until the cheese is melted and bubbly.

Notes

  • For extra crispiness, broil the casserole for 1-2 minutes after the final bake, watching carefully to prevent burning.
  • You can substitute the brown gravy mix with homemade beef gravy if desired.
  • Frozen mixed vegetables can be substituted with fresh vegetables such as diced carrots, peas, and corn.
  • To make ahead, assemble the casserole and refrigerate for up to 24 hours before baking.
